Easy dessert recipes to satiate your sweet tooth


You're having a boring day when an inexplicable impulse hits you in the middle of it and says, "You need to eat something sweet." But, to succumb to temptation or to resist it for the sake of one's health? The good news is that you will have discovered a couple of healthy and delightful recipes by the end of this article. Here’s a list of delicious dessert dishes that are easy to make, tasty, and healthy!


1. Vegan strawberry cheesecake popsicle 

Ingredients: 

  • 1 cup raw cashews, softened if needed (refer to step 1)

  • Half a cup of water

  • 3 tablespoons agave or maple syrup

  • 1 tablespoon lemon juice

  • 1 tablespoon apple cider vinegar

  • Half a teaspoon of vanilla extract

  • 1 cup fresh or frozen strawberries 

  • 3-4 tablespoons vegan cookie crumbs 

 

Instructions:

 

1. Softening the cashews: Cook the cashews for 10 minutes in water. Skip this step if you have a high-powered blender.

2. Making the cheesecake layer: Whisk the softened cashews, 1/2 cups of water, agave, lemon juice, vinegar, and vanilla together in a blender. Blend the contents until it is creamy. Set it aside.

3. Making the strawberry layer: Blend the strawberries until smooth.

4. Putting the popsicles together: Place about 2 tablespoons of cookie crumbs at the bottom of each serve. A small amount of the cheesecake mixture should be poured over the top. Then pour some of the strawberry sauce. Add the cookie crumbs, cheesecake layer, then strawberry layer until all of the popsicle molds are filled. Freeze until firm 

 

2. Red velvet waffles

 

Ingredients:

  • 2 cups all-purpose flour

  • ¼ cup natural process cocoa powder

  • ⅓ cup sugar

  • 2 teaspoons baking powder

  • 1 teaspoon baking soda

  • Half a teaspoon of salt

  • 2 cups buttermilk

  • 5 large egg yolks

  • ⅔ cup unsalted butter (melted)

  • ½ teaspoon red food coloring

  • 3 large egg whites

Instructions:

1. Preheat the waffle iron

2. Combine the ingredients: Combine flour, cocoa, sugar, baking powder, baking soda, and salt. Combine the buttermilk, egg yolks, and melted butter in a mixing bowl.

3. Stir thoroughly, and add the red food coloring.

4. Gently fold the egg whites into the batter

5. Pour the batter using a ladle: Spray the preheated waffle iron with cooking spray before pouring the batter in. 

6. Filling and topping: Before folding the waffles, spread the white chocolate on the bottom. Pour some white chocolate and sprinkle nuts as per your choice!






3. Rasmalai Trifle 

When you have a sweet tooth, Indian sweetness has its own way of satisfying it! 

Ingredients:

  • 150 gms slice of cake (of your choice)

  • 250 gms Rasmalai

  • 3 Motichoor Ladoo (optional)

  • 3 tbsp Cornflour

  • 1/4 cup assorted nut flour 

  • 1 tsp Cardamom powder

  • Half a cup of Sugar

  • 1.5 cup Milk

  • Half a cup of Cream

  • 1/4 tsp Rasmalai Essence or saffron strands (as per choice and availability)

  • Few drops of Yellow Food Colour (optional)

  • 175 gms Whipping Cream

  • 1/4 cup Icing Sugar

Instructions:

1. Rasmalai pudding: Combine the cornflour, pistachio powder, cardamom powder, and sugar. Whisk the ingredients. Gently pour in the milk and cream.  Place over low heat and mix until the sauce thickens.

2. Rasmalai whipped cream: In a mixing bowl, whisk the cream, icing sugar, and rasmalai essence until thoroughly whipped. Use the 1M Piping nozzle to fill a piping bag.

3. Assembling: Layer the cake first, then a tbsp of Rasmalai Milk. Place a rasmalai slice on top and crumble the ladoo using your hands and sprinkle it to fill in the gaps. Pour more rasmalai milk and add a few tablespoons of the Rasmalai pudding made earlier. Finally, finish with a dollop of Rasmalai whipped cream. Serve chilled with your favorite toppings!
