Easy breakfast recipes with lentils

This is a hearty breakfast that will give you energy all day long because lentils are cooked with shallots, paprika, lemon juice, and fresh parsley.
Ingredients
1 tablespoon olive oil
1 ¼ cup cooked chana dal
2 garlic cloves minced
2 shallots, thinly sliced
2 tsp soy sauce
½ tsp paprika
½ tsp pepper
¼ lemon juice
2 tbsp fresh parsley, roughly chopped
4 slices of whole wheat bread, toasted

Instructions
In a skillet, heat the olive oil over medium heat. Saute the garlic and shallots or green onions for 1 minute until the vegetables are fragrant. For the next few minutes, cook the onion until translucent, then add the chana dal, soy sauce, paprika, and pepper.
Squeeze in a good amount of lemon juice. Add the chopped parsley. Check the seasoning and add extra soy sauce if necessary.
Spread the tahini over the whole wheat or multigrain toast. Sprinkle the spiced lentils over the tahini and enjoy.
