Irish Bombay Potatoes
It's never been easier to make an easy vegan breakfast with potatoes that combine Indian curry and Irish ingenuity.
Ingredients
500 gm potato
1 tsp salt
2 tbsp tomato paste
4 tbsp oil
2 tsp curry powder
2 tsp cumin seeds
2 tsp turmeric powder
½ cup basil, fresh (or 1 tbsp dried basil)
1 teaspoon mustard seeds
2 tablespoon lemon juice
2 tablespoon fresh coriander (Chopped)
2 tbsp white vinegar
1 tbsp garlic finely chopped
Instruction
Set the oven to 200°C/390°F.
In a large bowl, place the potatoes and cut them into quarters. Combine the remaining ingredients. Coat and mix the potatoes thoroughly.
Bake the potatoes on a large oven tray.
After 15 minutes, remove from the oven and add dried basil and garlic. Spread the basil evenly over the potatoes.
In another 10-15 minutes, you should be able to easily pierce the potatoes with a fork. As a side dish, serve with vinegar, yogurt, hummus, or creme fraiche.
Fluffy Buckwheat Pancakes
Gluten-free, fluffy, and light, buckwheat pancakes are a great breakfast option. With a dash of vanilla, they're tasty yet healthy too.
Ingredients
1 ½ cups buckwheat flour
1 ¼ cups almond milk
2 tbsp white vinegar
4 tbsp unsalted vegan butter, melted, plus more for skillet
1 tbsp jaggery powder
¾ teaspoon baking soda
½ tsp salt
1 tsp vanilla extract
Instructions
Combine the flour, baking powder, salt, and vanilla extract in a mixing bowl.
Add the remaining ingredients and mix until the flour is moistened. Clumps are okay. Don't overmix.
Let the batter rest for 8-9 minutes as you heat a nonstick pan or griddle over medium heat.
Pour 1/4 cup portions of batter onto the pan after spraying it with non-stick cooking spray.
When bubbles appear all over the pancake, the edges should start to look dry and cook after 3-4 minutes. Flip the pancake and cook for another 1-2 minutes. Then repeat the process until you have used up all the batter. This should make about 8 pancakes.
Then serve with your favorite pancake toppings or store in the fridge or freezer.
