Chatpata Chaats Using Pani Puris

Pani Puri is an Indian chaat that always appeals to all flavor palettes. It is called by different names across the country, but most popularly known as Pani Puri. The puris are small semolina/wheat flour spheres that are rolled into small sheets and deep fried until crisp. They are then stuffed with mashed potatoes, boiled chickpeas, chopped veggies, and then dipped in chilled mint tamarind water (the pani) and eaten whole.


The flavor of Pani Puri relies on authenticity. The puris available in the market these days are chemically processed and do not have the same authentic flavor. Classic Pani Puri Chaat


This recipe is to make classic pani puri at home with your choice of fillings.


Ingredients:

  • Uncooked Pani Puri 10 nos

  • 1 cup chopped potato (boiled)

  • ¼ cup chopped onion

  • ½ cup curd (well beaten)

  • Coriander leaves (finely chopped)

  • 3 green chilies (finely chopped)

  • 2 tbsp tamarind chutney

  • 2 tbsp green chutney

  • Sev as needed

  • 1 tbsp cumin powder, roasted

  • 1 tsp red chili powder

  • Chaat masala as needed

  • Salt as needed


Instructions: 

  • Mash the boiled potatoes in a bowl.

  • Fry the puris and set it aside to cool.

  • Poke a large hole in the top of each puri and fill each puri with some of the mashed potatoes. Top with the onion and green chilies.

  • Drizzle some tamarind chutney and green chutney. Put some curd on each puri.

  • Sprinkle chaat masala, roasted cumin powder, red chili powder, and black salt on top.

  • Sprinkle the sev on top and garnish with chopped coriander leaves. Serve immediately!


Tawa Paneer Chaat


This unlikely combination of paneer and crispy puris is sure to delight your palate!


Ingredients:

  • 15-20 Uncooked Pani Puris

  • 250g paneer

  • 3 tbsp oil

  • 2 onions, chopped

  • ½ tsp ginger-garlic paste

  • 1 tsp green chilies, chopped

  • 3 tbsp mixed bell peppers, chopped

  • ½ cup tomato puree

  • 2 tsp pav bhaji masala

  • ½ tsp turmeric powder

  • 1 tsp chaat masala

  • Tamarind chutney

  • ½ tsp white pepper powder

  • Chopped coriander leaves 

  • Bhujia as needed

  • Salt to taste

  • ½ tsp sugar

  • 1 tbsp lemon juice


Instructions:

  • Heat some oil in a pan and add the cubed paneer in with a sprinkle of salt. Fry until golden brown and set aside.

  • To the pan, add in the chopped onion and saute until translucent, then add the ginger-garlic paste, mix well, and add the bell peppers.

  • Combine salt, turmeric powder, pav bhaji masala, sugar and tomato puree and stir well to combine.

  • Fill the fried pani puris with the mixture.

  • Sprinkle pepper powder, fried paneer, chaat masala, and lemon juice into the fried pani puri mixture. Turn off the heat and sprinkle bhujia and coriander leaves over the top.

  • Serve with tamarind chutney!
